A friend of mine (from Connecticut) once told me that some of his ancestors were involved in the business of hacking out chunks of ice from ponds on their properties, and shipping them out to wherever. He also claimed that they had insulated structures filled with ice that would last throughout the entire warm season, and used them as giant refrigerators for themselves, as well as charging others to keep things like meat fresh all year 'round. I really don't know how much of this is true, but it doesn't seem unreasonable to me. In any case, the invention of ice making machines, and refrigeration systems, put an end to it all.
